Overnight Strawberry French Toast Casserole

By May 25, 2026 No Comments

An easy, make-ahead breakfast casserole layered with brioche, fresh strawberries, and a rich custard. Perfect for holidays, brunch, or a slow Southern morning.

There’s just something about waking up to the smell of baked strawberries and warm vanilla that feels like a little celebration in your own kitchen.

This Overnight Strawberry French Toast Casserole is one of those recipes I love to pull out for holidays like Memorial Day weekend, Mother’s Day, or anytime you’ve got family staying over. You do all the work the night before, and in the morning… you just slip it in the oven, pour a cup of coffee, and let the magic happen.

And let me tell you, when that golden top comes out of the oven with those strawberries bubbling around the edges, it looks like you’ve been up since dawn making something fancy… when really, you’ve already done the hard part.

Why You’ll Love This Recipe

  • Make-ahead friendly (perfect for holidays and guests)
  • Rich, soft custard with a lightly crisp golden top
  • Sweet strawberries baked right into every bite
  • Feels elegant, but couldn’t be easier
  • Perfect for brunch tables, showers, or summer mornings

  • Granulated sugar
  • Vanilla extract
  • Cinnamon
  • Salt

  • Cream cheese
  • Powdered sugar (for dusting)
  • Maple syrup or strawberry syrup (for serving)

For the Vanilla Cream Glaze (Optional)

  • Powdered sugar
  • Milk or heavy cream

How to Make Overnight Strawberry French Toast Casserole

  1. Grease a 9×13 baking dish.
  2. Layer half the brioche cubes in the dish.
  3. Add cream cheese cubes
  4. Top with remaining bread cubes.
  5. In a large bowl, whisk together:
    • eggs
    • milk
    • cream
    • brown sugar
    • granulated sugar
    • vanilla
    • cinnamon
    • salt
    • melted butter
  6. Pour evenly over the bread and gently press down so it soaks in.
  7. Cover and refrigerate overnight.

The Next Morning

  1. Remove from the refrigerator about 20 minutes before baking.
  2. Add the strawberries:
Slice 2 cups fresh strawberries and gently tuck them down into the casserole, nestling them throughout the bread.
  3. Bake at 350°F for 50-60 minutes,or until the center is set and the top is golden.
  4. Let cool for 10 minutes.

Make the Vanilla Cream Glaze

In a small bowl, whisk together:

  • 1½ cups powdered sugar
  • 2–3 tablespoons milk or heavy cream
  • ¼ teaspoon vanilla extract

Whisk until smooth and drizzle-ready.

To Serve

  • Lightly dust with powdered sugar
  • Drizzle with the vanilla cream glaze (optional but recommended)
  • Top with fresh strawberries
  • Serve warm with maple syrup or strawberry syrup

Instead, always:

  • Slice them fresh in the morning
  • Gently tuck them into the casserole right before baking

It’s a small step that makes a big difference in flavor and texture.

The strawberry tip that makes all the difference

Now let me save you from a mistake I already made so you don’t have to.

The first time I made this, I added the strawberries the night before—and I won’t do that again.

They released too much moisture overnight and turned a little sour, and the casserole ended up soggy in spots. I actually had to pick them out after baking, and nobody wants to be doing

Pro Tip for Perfect French Toast Casserole

If you want that bakery-style result:

  • Let the bread fully soak overnight (that’s your custard base)
  • Use rich bread like brioche (I used Nature’s Own Brioche Bread)
  • And always add delicate fruits like strawberries right before baking, not before chilling
  • Use a good quality cream cheese such as Philadelphia Cream Cheese

Serving & Entertaining Ideas

This is one of those dishes that looks right at home on a pretty brunch table.

Serve it with:

  • Crispy bacon or sausage
  • Fresh fruit on the side
  • Mimosas or sweet tea (of course)

It’s perfect for:

  • Memorial Day, 4th of July, Labor Day weekend brunch (For a bicentennial weekend, add some blueberries for a red, white and blue look)
  • Mother’s Day
  • Overnight guests
  • Baby or bridal showers
  • Christmas morning brunch

Or honestly… just a quiet Saturday morning when you want something a little special.

Delicious Variations

One of the best things about this overnight French toast casserole is how easy it is to change with the seasons or whatever fruit you have on hand.

Blueberry

Swap strawberries for fresh blueberries. Lovely with a little lemon zest.

Raspberry

Use raspberries for a slightly tart, elegant brunch version.

Mixed Berry

Combine strawberries, blueberries, raspberries, or blackberries for a colorful summer casserole.

Peach

Fresh diced peaches make this taste like summertime in the South.

Strawberry Cream Cheese

Add cream cheese cubes for a rich cheesecake-style twist.

Banana Foster

Add sliced bananas, extra brown sugar, and chopped pecans.

Apple Cinnamon

Use diced apples and cinnamon for a cozy fall version.

Storage & Make-Ahead Tips

  • Store leftovers covered in the refrigerator for up to 3 days
  • Reheat in the oven at 300°F or microwave individual portions
  • You can assemble it up to 24 hours in advance
  • It can also be frozen after baking—just thaw and reheat

A Little Southern Note

There’s something about strawberries in the summertime that just feels like homegrown goodness on a plate. And when you pair that with soft brioche and a rich custard… well, that’s the kind of breakfast that has people lingering at the table just a little longer.
