Easy Cake Mix Cookies

Made with a classic white cake mix, these soft and chewy cookies come together in minutes, then get a light drizzle of vanilla glaze for just the right touch of sweetness. They’re the kind of treat you can bake up before heading out the door, but still look beautiful enough to serve at brunch or set out with a glass of sweet tea.

Sometimes the simplest recipes really are the ones everyone loves the most.

There’s about nothing easier than these little cookies and  honestly, you could just about make them with your eyes closed. No sifting flour, no dragging out half the kitchen, and barely any measuring at all. Just simple ingredients that come together into the softest, prettiest cookies.

I made these for Mother’s Day weekend and stuck a batch right in the freezer so they’d be ready to pull out and serve anytime somebody stopped by. That’s the kind of recipe I love having around.

I did mine with a pink glaze for Mother’s Day, but you could easily switch them up for Memorial Day or the Fourth of July with a white glaze and festive sprinkles. They’re perfect for after-school snacks, church gatherings, summer cookouts, or those last-minute moments when you need a dessert in a hurry but still want something homemade and pretty.

  •  white cake mix
  •  Eggs
  •  Vegetable oil


For the Glaze

  • Powdered sugar

How to Make  Easy Cake Mix Cookies

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the cake mix, eggs, and oil.
  3. Mix until a a smooth dough has formed.
  4. Scoop or roll dough into 1-inch balls and place on the prepared baking sheet, leaving space between each.
  5. Bake for 6 to 7 minutes, just until the edges are set and the centers are still soft. Be careful not to over bake.
  6. Remove from the oven and let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.

Vanilla Glaze

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
  2. Adjust consistency with a little more milk if needed—it should be thin enough to drizzle.
  3. Drizzle over completely cooled cookies.
  4. Add sprinkles while glaze is still wet, if using.
