  • 2 cups shredded zucchini (lightly packed)
  • 1 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 2½ teaspoons vanilla extract
  • ½ cup vegetable oil
  • ¼ cup melted butter, cooled
  • ½ teaspoon salt
  • 3 large eggs
  • 1½ cups chopped walnuts or pecans (or a mix)
