What You’ll Need to Make Rich & Fudgy Guinness Brownies

  • 1 (18.2-ounce) box Brownie Mix (Betty Crocker with the chocolate syrup packet or Duncan Hines Fudge Brownie Mix
  •  Guinness Stout
  • Eggs
  • Vanilla extract
  • Vegetable oil
  • semi-sweet chocolate morels (optional)

For Guinness  Fudge Chocolate Icing

  • Semi-sweet chocolate chips
  • Salted butter
  •  Guinness stout
  • Powdered sugar
  • Vanilla extract

How to make Guinness Brownies

  1. Preheat the oven to 350 degrees. Grease or line a 8 x 8 or 9 x 9 square pan with parchment paper. I highly recommend parchment paper. With parchment paper, all you have to do is lift the brownies out of the pan.
  2. In a large mixing bowl, combine the brownie mix, eggs, Guinness, oil, vanilla extract and chocolate morels if you are using them. Gently stir until mixture is smooth. Don’t over mix.
  3. Pour brownie batter into the prepared pan. Bake for about 25 minutes, or until a toothpick inserted 1 inch from the edge comes out clean.

    Frost with the Guinness Fudge Icing.
  4. Let the brownies cool before cutting for the best texture and clean slices.

How to Make Guinness Fudge Icing

  1. In a small saucepan over low heat, combine the chocolate chips, butter, and Guinness stout.
  2. Stir constantly until the chocolate and butter are completely melted and smooth.
  3. Remove from heat and whisk in the powdered sugar until glossy and smooth.
  4. Stir in the vanilla extract if using.
  5. Pour or spread the glaze over the brownies while they are slightly warm so it spreads easily.
  6. Let the glaze set before cutting into squares.

Tips

  • This glaze will set into a soft, fudgy chocolate topping once cooled.
  • If it thickens too much while spreading, add 1 teaspoon warm Guinness or milk to loosen it.

  2. 1/4 cup Guinness stout
