Rich & Fudgy Guinness Brownies (Easy St. Patrick’s Day Dessert)

Description

These Rich and Fudgy Guinness brownies start with a brownie mix and a splash of Guinness for a rich, chocolatey dessert that’s perfect for St. Patrick’s Day or anytime you need a quick treat.


Ingredients

  1. 1 (18.2-ounce) box Betty Crocker Deluxe Brownie Mix or Duncan Hines Dark Chocolate Fudge Brownie Mix
  2. 1/4 cup Guinness stout
  3. 2 large eggs, slightly beaten
  4. 1 teaspoon vanilla extract
  5. 1/2 cup vegetable oil
  6. ½ cup semi-sweet chocolate morels (optional)

Guinness Chocolate Fudge Glaze

Ingredients

  • 8 -ounces (about 1 cup) semi-sweet chocolate chips
  • 3  tablespoons salted butter
  • 3 tablespoons Guinness stout
  • 1/2 cup powdered sugar, sifted to prevent lumps (might need a tab more powdered sugar)

1/2 teaspoon vanilla extract (optional but recommended)


Instructions

  1. Preheat the oven to 350 degrees. Grease or line a 8 x 8 or 9 x 9 square pan with parchment paper. I highly recommend parchment paper. With parchment paper, all you have to do is lift the brownies out of the pan.
  2. In a large mixing bowl, combine the brownie mix, eggs, Guinness, oil, vanilla extract and chocolate morels if you are using them. Gently stir until mixture is smooth. Don’t over mix.
  3. Pour brownie batter into the prepared pan. Bake for about 25 minutes, or until a toothpick inserted 1 inch from the edge comes out clean. Frost with the Guinness Fudge Icing.
  4. Let the brownies cool before cutting for the best texture and clean slices.

For the Guinness Chocolate Fudge Icing

  1. In a small saucepan over low heat, combine the chocolate chips, butter, and Guinness stout.
  2. Stir constantly until the chocolate and butter are completely melted and smooth comes to a soft boil.
  3. Remove from heat and whisk in the powdered sugar until glossy and smooth.
  4. Stir in the vanilla extract if using.
  5. Pour or spread the glaze over the brownies while they are slightly warm so it spreads easily.

Let the glaze set before cutting into squares.

Notes

Storage and Freeze Tips

Brownies will keep about 4 days in an airtight container and they freeze beautifully for up to two months. Thaw overnight in the fridge and warm in the microwave if desired.
