Most people are surprised when they hear what’s in this pie.
Oatmeal.
Instead of flour, quick-cooking oats gently thicken the filling. They melt right into the batter as it bakes, creating a smooth, rich texture without being noticeable.
You don’t taste “oatmeal.”
You just taste a perfect chocolate fudge pie.
Quick Oats vs. Old-Fashioned Oats
For best results, use quick-cooking oats.
Why?

Old-fashioned oats will work, but they make the pie more textured and chewy. If you use them, pulse them briefly in a food processor first.

How to make this Old Fashioned Chocolate Fudge Pie
- Preheat the oven to 325 degrees
- In a large mixing bowl, whisk the eggs until light and fluffy.

- In a separate bowl, melt the butter in the microwave and add the hot melted butter to the sugar. Stir until the sugar is dissolved. Stir the sugar and butter mixture into the beaten eggs. Next add the cocoa powder, oatmeal, and vanilla extract.

- Stir with a wooden spoon or spatula until smooth and well combined.
- Pour the filling into the unbaked pie shell. And to prevent the crust from over browning, place foil around the pie crust edges. I take the foil off after 35 minutes of baking so it can brown just the right amount.

- Bake for 50 to 60 minutes, or until the edges are set and the center is just slightly soft.
- Remove from oven and allow to cool completely before slicing.

Tips for Making the Best Chocolate Fudge Pie
- Whisk the eggs well first (helps with shine)
- Make sure the butter is hot enough to melt the sugar. Also mix the butter and sugar in a separate bowl before adding to the beaten eggs. You don’t want the hot butter to accidentally scramble the eggs.
- Use real butter, not margarine. I use salted butter. Gives the pie more flavor.
- Don’t overbake—slight jiggle is good
- Let the pie cool before slicing
- Use good-quality cocoa powder such as Hershey’s

- ¾ cup (1½ sticks) salted butter, melted
- 1 ¾ cups white granulated sugar
- 6 Tablespoons of unsweetened cocoa
- ½ cup quick-cooking oatmeal
- 1½ teaspoons pure vanilla extract

- Freshly whipped cream, vanilla ice cream, chocolate shavings or chocolate fudge syrup for topping (Optional)
