Crunchy Oriental Coleslaw

Description

This Crunchy Oriental Coleslaw is packed with crunchy ramen noodles, mandarin oranges, toasted almonds, and a tangy Asian-inspired dressing. Perfect for cookouts, potlucks, and summer BBQs!


Ingredients

  • 1 (16 oz) bag of coleslaw mix (or shredded green and purple cabbage + shredded carrots)
  • 1/2 cup sliced green onions
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup sunflower seeds
  • 1 package of ramen noodles, uncooked (crushed)
  • 1/4 cup sesame seeds (optional)
  • 1 (8-ounce) can mandarin oranges, drained

Dressing:

  • 1/2 cup olive oil or vegetable oil
  • 1/4 cup rice vinegar (or apple cider vinegar)
  • 1/4 cup sugar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare Dressing: In a jar or bowl, whisk together olive oil, rice vinegar, sugar, soy sauce, sesame oil, garlic powder, and ground ginger. Chill in the fridge for at least 30 minutes.
  2. Mix Coleslaw: In a large bowl, combine coleslaw mix, green onions, almonds, sunflower seeds, sesame seeds, crushed ramen noodles and mandarin oranges.
  3. Combine: Pour the dressing over the coleslaw mix and toss until well coated.
  4. Chill & Serve: Cover and refrigerate for at least 1 hour to let the flavors meld. Toss again before serving.

Tip:

  • For extra crunch, add the ramen noodles just before serving.
