Ingredients
For the Slaw
- 6 cups finely shredded green cabbage
- 1 cup finely shredded purple cabbage
- ⅔ cup shredded carrots
- 1 (20-ounce) can pineapple tidbits, drained
- 1 (8-ounce) can crushed pineapple, drained
- 1 tablespoon poppy seeds
For the Dressing
- 1 cup mayonnaise
- 2 tablespoons sugar
- 2 teaspoons apple cider vinegar
- 1 tablespoon pineapple juice*
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large bowl, combine the green cabbage, purple cabbage, pineapple tidbits, crushed pineapple, and poppy seeds.
- In a separate bowl, whisk together the mayonnaise, sugar, apple cider vinegar, pineapple juice, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until evenly coated.
- Cover and refrigerate for at least 2 hours before serving.
- Stir well and serve chilled.
Notes
- Freshly shredded cabbage provides the best texture and taste.
- Drain pineapple thoroughly before adding.
- Optional: Add ¼ cup sunflower kernels for extra crunch.
- Perfect served on pulled pork sandwiches or Hawaiian BBQ sliders.
