Description

These Easy No-Bake Peanut Butter Oatmeal cookies are chewy, buttery, and packed with sweet toffee bits. Ready in just minutes with no oven needed!


Ingredients

  • 1 cup firmly-packed brown sugar
  • 1 cup white granulated sugar
  • 1/2 cup (1 stick) salted butter
  • 1/2 cup whole milk
  • 1/4 tsp. salt
  • 3/4 cup creamy peanut butter
  • 2 tsp. vanilla extract
  • 2 1/2 cups quick-cooking oats
  • 1 cup plain toffee bits (Bits O’ Brickle)

Instructions

  1. In a large saucepan over medium heat, combine brown sugar, white sugar, butter, milk, and salt. Stir constantly until the mixture comes to a full rolling boil.
  2. Boil for exactly 1 minute, then remove from heat.
  3. Stir in peanut butter and vanilla until fully smooth.
  4. Add oats and stir until well combined.
  5. Let the mixture cool slightly (3–4 minutes), then fold in the toffee bits.
  6. Drop by spoonfuls onto parchment or wax paper and let set completely—about 30 minutes.
  7. Store in an airtight container at room temperature or freeze for later.
