These Easy No-Bake Peanut Butter Oatmeal cookies are chewy, buttery, and packed with sweet toffee bits. Ready in just minutes with no oven needed!
Ingredients
- 1 cup firmly-packed brown sugar
- 1 cup white granulated sugar
- 1/2 cup (1 stick) salted butter
- 1/2 cup whole milk
- 1/4 tsp. salt
- 3/4 cup creamy peanut butter
- 2 tsp. vanilla extract
- 2 1/2 cups quick-cooking oats
- 1 cup plain toffee bits (Bits O’ Brickle)
Instructions
- In a large saucepan over medium heat, combine brown sugar, white sugar, butter, milk, and salt. Stir constantly until the mixture comes to a full rolling boil.
- Boil for exactly 1 minute, then remove from heat.
- Stir in peanut butter and vanilla until fully smooth.
- Add oats and stir until well combined.
- Let the mixture cool slightly (3–4 minutes), then fold in the toffee bits.
- Drop by spoonfuls onto parchment or wax paper and let set completely—about 30 minutes.
- Store in an airtight container at room temperature or freeze for later.
